Large Event Sample Menus

Classic American Wedding Menu

Full service buffet pricing starts at $39pp and is for parties of 75+ guests. Pricing is subject to change based on venue requirements, finalized wedding menu, & needs.

Cocktail Hour

Simple Apps Package:  A variety of simple charcuterie items such as; broccoli, carrots, celery, cauliflower,strawberries, grapes  sliced cheeses, and crackers

Main Entrees

Wedding Chicken: Seared seasoned chicken breasts simmered in a white wine cream sauce

Red Wine Beef : Beef chuck is cubed and braised in a red wine reduction until the meat is fork tender


Side Dishes

Garlic Whipped Potatoes: A house favorite. Yukon gold potatoes are mashed with heavy cream, milk, garlic, and lots of butter until perfectly smooth! 

Lemon Roasted Asparagus : Tender roasted asparagus seasoned and served with a squeeze of fresh lemon juice. 


Salad

House Salad: Mixed spring greens tossed with shredded carrots, grape tomatoes, cucumber, and croutons. Served with Balsamic & Ranch Dressing on the side. 

Dinner Rolls

House baked yeast dinner rolls with butter foils on the side

COCKTAIL hOUR

Watermelon Feta Cups: Sweet watermelon, fresh mint, feta,  and english cucumbers are tossed in a lime vinaigrette 

Havarti & Raspberry Skewers: Cubes of Havarti cheese and fresh raspberries on a skewer. Drizzled with dark choclate. 

Bacon Wrapped Dates: Dates are wrapped with thick cut applewood smoked bacon. Glazed with a paprika maple syrup and baked

Main Entrees

Flank Steak with Fresh Chimichurri: Flank steak is marinated in a garden fresh Chimichurri and then grilled until medium rare. Served sliced against the grain with extra chimichurri drizzle over

Peach Balsamic Chicken: Seasoned seared chicken breasts are served with a balsamic colorado peach compote

Squash & Apple Bruschetta: A toasted crostini smeared with a whipped sage cream cheese and then topped with arugula and a butternut squash & apple bruschetta
Pumpkin Butter & Brie Phyllo Bites: Brie cheese & fresh made pumpkin butter is combined in a crispy mini phyllo shell. Topped with a drizzle of honey and crushed toasted walnuts

Main Entrees

Herbed Crusted Pork Loin with Apple Chutney: Pork loins rubbed  in our special herb seasoning blend before being roasted.  Served sliced with a warm spiced apple chutney on the side

Beef Ragu: House made braised beef ragu tossed with pappardelle noodles and freshly grated pecorino romano

Side Dishes

Braised Green Beans: Fresh green beans are simmered with red bell peppers in chicken stock until tender crisp. 

3 Cheese Mac N' Cheese: Our house made macaroni & cheese is ooey & gooey & full of cheese! Topped with a panko bread crumb topping. 

Salad

Winter Salad: Mixed spring greens tossed with ,diced green apples, toasted walnuts, dried cranberries, and goat cheese. Served with a Pumpkin Ranch & Balsamic Dressings. 

Bread

Honey Cornbread Slabs: Freshly baked cornbread served in slabs with soft butter for spreading 


Upscale Colorado Classic Menu

Full service buffet pricing starts at $52pp and is for parties of 75+ guests. Pricing is subject to change based on venue requirements, finalized wedding menu & needs.

Appetizers

Shrimp Ceviche: Marinated diced shrimp with tomatoes, jalapeno, red onion, fresh cilantro, and lime juice. 

Mexican Street Corn Cups: Your favorite Elote  flavors! Grilled Fresh corn, queso fresco, fresh lime juice, and a lime mayo all tossed together. Topped with chili powder & a lime wedge. 

Main Entree's

Blackened Chicken in Poblano Cream Sauce: Grilled blackened chicken breast in a creamy roasted poblano pepper sauce. 

Chili Lime Skirt Steak: Skirt Steaks are tossed in a the BEST chili lime marinade to sit in overnight. Grilled hot & fast until medium rare and then sliced against the grain for ultimate tenderness

Side Dishes

Cilantro Lime Rice: Steamed white rice with fresh lime juice & cilantro.

Frijoles Borrachos (Drunken Beans): A personal favorite dish! House-made pinto beans are simmer with a dark Mexican beer, bacon, onion, garlic and jalapenos. Full of flavor!

Calabacita Squash: Sauteed Zucchini, bell pepper, fre50sh corn kernels,  & yellow squash 

Handmade Tortillas

Handmade flour & corn tortillas. Slightly charred over an open flame to bring out the flavors. Served warmed!

 Donut Bar: Choose from your choice of cake & yeast raised glazed donuts!  Freshly made and hung individually on our Doughnut Rack.

Edible Cookie Dough Bar: Our cookie dough is egg free & safe for all to consume.  Choose from mutiple flavors. 

Brownie Sunday Bar:  Ooey Gooey fudge brownies. Served with or without ice cream and a multitude of toppings 

Cookies & Milk Bar: Varieties of cookies sitting atop glass of ice cold milk

Pie Bar:  Varieties of fruit & custard pies with fresh whipped cream
